Description
Ermita d'Espiells is made by Juvé & Camps in Sant Sadurní d'Anoia, the heart of the Penedès and of Cava country. It blends the three traditional Penedès varieties, Macabeo, Xarel·lo and Parellada, with a small amount of Chardonnay, all from the winery's own La Cuscona and Mediona estates. The Penedès sits inland from the Mediterranean, its vineyards rising onto limestone slopes where cooler nights preserve acidity and slow ripening. Fermentation is carried out at controlled temperature in stainless steel to keep the aromatics clean and primary, and the wine then rests nine months in bottle, which softens its edges and adds a subtle leesy depth. The result is low in alcohol at 11.5 percent and built for freshness. The colour is pale straw. The nose shows green apple, pear and white flowers with a faint bready note from the bottle age, and Xarel·lo lends a gentle almond character. The palate is dry, light and crisp, with lemon and orchard fruit on a clean, mineral finish. Serve well chilled at 8 degrees.
