Description
Equipo Navazos is the project of Eduardo Ojeda and Jesus Barquin, who search the cellars of the Marco de Jerez and Montilla-Moriles for old, forgotten casks and bottle them as single selections. This Manzanilla Pasada comes from one such find in Sanlucar de Barrameda, made from Palomino grown on the albariza chalk soils of the region. Manzanilla is a Fino aged only in Sanlucar, where the cool, humid Atlantic air keeps the flor yeast thick year round, giving the saline, delicate style of the town. A pasada is a Manzanilla aged longer than usual, so the flor veil begins to thin and a faint oxidative, nutty depth develops alongside the saline freshness, moving the wine towards an Amontillado character while keeping its bone dry coastal edge. The wine ages biologically under flor through the solera system, with younger wine fractionally blended through older stages. The colour is pale gold. The nose shows chamomile, almond and delicate bakery aromas. The palate is dry and deep, saline and concentrated, with marked length. Serve chilled at around 9 to 11 degrees in a white wine glass.
