Description
La Bota de Florpower Nº 119 is part of Equipo Navazos's project to make dry, unfortified white wine from Palomino, the great Sherry grape, in the Marco de Jerez. Where most Palomino is fortified and turned into Fino or Manzanilla, Florpower is bottled as a light table wine at 11.5 per cent. The wine ages under flor, the layer of living yeast that grows on the surface of the wine in cask, and eight months beneath this veil marks it clearly. The flor feeds on oxygen and the wine's glycerol, shielding it from oxidation and adding a savoury, yeasty and distinctly saline character that reflects the albariza chalk and Atlantic influence of the region. The result is dry, mineral and textured rather than fruity and simple. The colour is pale lemon-gold. The nose shows white fruit, apple and pear, with a mineral, bread-dough undertone from the flor. The palate is dry and saline, with orchard fruit, citrus and an almond note carried by a firm acidity and a long, chalky finish. Serve well chilled at 9 to 11 degrees in a white glass or a copita.
