Description
Envínate is the project of four winemaking friends who met studying oenology and now make terroir-driven wines across several Spanish regions with minimal intervention. Táganan comes from a rugged coastal estate in the north of Tenerife, where old ungrafted vines, some between fifty and a hundred and fifty years old, grow on steep volcanic slopes. The Listán Negro and mixed native varieties are rooted in dark volcanic soils that drain fast and hold little water, giving small crops of concentrated fruit and a distinct smoky, mineral character. The Atlantic setting and altitude bring cool nights and sea breezes that keep the wine fresh and aromatic at 13.2 percent. Fermentation uses native yeasts, often with whole bunches, before eight months in oak that rounds the tannins while keeping the wood in the background. It shows a bright, medium ruby, with red berries and cherry on the nose over black pepper, dried herbs, a smoky volcanic edge and a saline lift. The palate is fresh and light-framed, with fine tannins, lively acidity and a stony, savoury finish. Serve lightly chilled at 14 to 15 degrees, with grilled fish, poultry or lighter meats.
