Description
Entreflores Verdejo is a Rueda white made by Príncipe de Viana exclusively from the Verdejo grape. The fruit is picked by hand in September from vines over 25 years old, with the berries sorted for ripeness and health before pressing. Rueda's high plateau sits on poor sandy and gravel soils over limestone, exposed to a harsh continental climate of cold winters and hot days tempered by cool nights. That wide diurnal range is central to the style, holding natural acidity and preserving the grape's green, aromatic character through the summer heat. At the winery the grapes are destemmed and gently pressed, and the must is fermented at low temperature in stainless steel so the primary fruit stays clean and bright. The wine is pale yellow with greenish glints. The nose is intense, showing green apple and pear with a touch of citrus, and the palate is crisp and dry with a grassy, gently bitter finish typical of Verdejo. Serve it chilled, around 8 to 10 degrees, in a standard white glass.
