Description
Entre Vinyes, the Catalan project of Maria Barrena and Josep Tort, makes this brisat from Xarel·lo and Parellada, two of the classic cava grapes, here given the orange-wine treatment that dates back six thousand years to Georgia. Rather than pressing the white grapes before fermentation, the skins are left in contact with the juice, the method the Catalans call brisat. The two grapes grow in the Penedès, where Mediterranean warmth ripens the fruit and coastal breezes hold the acidity, with Xarel·lo bringing structure and Parellada lending delicacy and lift. The wine ferments and ages for three months on its skins in clay amphorae. That short maceration draws a light phenolic grip and a faint amber tint, while the porous clay rounds the texture with gentle oxygen exchange and no oak. At just 11 percent the wine stays light and bright. The colour is pale gold, with a nose of lemon, green apple and white flowers. The palate is dry and fresh, with white-peach fruit, dried-herb tones, a soft grip and a clean, saline finish. Natural and organic, made with minimal intervention. Serve well chilled at 9 to 11 degrees as an aperitif or with light fish.
