Enate makes this rosé in D.O. Somontano, in the Aragonese foothills of the Pyrenees, from Cabernet Sauvignon. The variety gives a deeper, more structured pink than a Garnacha rosé, with raspberry, blueberry and a peppery edge over fresh acidity.

Description
Enate was established in 1991 in Salas Altas, in the heart of D.O. Somontano in Aragón, a region in the Pyrenean foothills known for marrying art and wine on its labels. This rosé is made entirely from Cabernet Sauvignon, an unusual choice for a Spanish pink that gives it more colour, structure and a distinctive blackcurrant-leaf character. Somontano sits at altitude with a continental climate and a wide diurnal range, where cold nights preserve acidity and aromatic freshness in the fruit. A short, controlled skin contact draws the deeper colour and a little tannic grip from the Cabernet skins, while cool fermentation keeps the red fruit clean and bright rather than building oak. The colour is a vivid pink. The nose shows raspberry and blueberry over a subtle peppery, herbal backdrop. The palate is dry and fresh, with red and dark berry fruit, red currant and a faintly green, savoury edge carried on lively acidity. Serve chilled at 9 to 11 degrees.
