Description
Enate Cabernet-Cabernet is a single-variety Cabernet Sauvignon from D.O. Somontano, made by Enate in Salas Altas, Huesca. Founded in 1991, Enate quickly became a reference in Spanish wine, pairing traditional know-how with modern cellar technique across a wide range of bottlings. Somontano sits in the foothills of the Aragonese Pyrenees, where altitude and cool mountain air give a wide diurnal swing; warm days ripen Cabernet fully while cold nights preserve the acidity and aromatic freshness the variety needs to avoid heaviness. The estate's vineyards, around five hundred hectares, are farmed under respectful, sustainable practices. This wine is aged sixteen months in French oak, where slow oxygen exchange rounds Cabernet's naturally firm tannins and adds cedar, vanilla and sweet spice while the dark fruit stays in front. At fifteen per cent it is ripe and powerful. It pours a deep cherry red with a garnet rim, with a nose of blackcurrant, plum, cedar, sweet spice and a cool eucalyptus lift. The palate is full-bodied and structured, with firm but ripe tannin, good acidity and a long, spicy finish. Serve at 17 to 18 degrees, decanting an hour ahead. It is built for grilled and roast red meat.
