Description
Costumbres Blanco is made by En Voz Baja, a small organic estate in Rioja run by biologist Carlos Mazo and designer Isabel Ruiz, who focus on traditional practices and reviving old local grapes. The wine leads on Viura, Rioja's main white, blended with Rojal, Garnacha Gris and Tempranillo Blanco, field varieties that add texture and interest. Organic farming keeps the vineyards free of synthetic inputs. The wine spends eleven months in oak barrels, an extended ageing that shapes a fuller, more savoury white in the older Rioja tradition, with slow oxygen exchange through the wood building texture and a nutty depth while malolactic fermentation softens the acidity. At 12.5 percent it stays balanced rather than heavy. The colour is lemon-gold. The nose shows green apple and pear alongside almond, a touch of honey and white flowers, with a light toasty edge from the barrel. The palate is dry and textured, broad through the middle from the oak ageing yet fresh on the finish. Serve at 10 to 12 degrees.

Its oak-aged texture suits roast chicken, pork and meatier white fish. It also works well with hard nutty cheeses such as aged Manchego or Gruyère, where the savoury depth of the wine matches the cheese.
