Description
Elvio Cogno makes this Langhe Bianco from Nascetta, an old Piedmontese variety he helped rescue from near disappearance, farmed sustainably from the estate at Novello. Nascetta is prized for combining aromatic lift with real structure, and the Langhe's calcareous marl soils give the wine its taut acidity and stony core, while the diurnal swing between warm days and cool nights in this hilly, continental climate preserves aroma and freshness. The wine ferments and then rests on its fine lees, a stage that builds mid-palate texture and a light savoury depth through the slow release of mannoproteins, without recourse to new oak. The colour is bright straw. The nose leads with lemon and green apple, moving to white peach, sage and thyme, with a chamomile and white-flower note that grows as the wine ages. The palate is dry, mineral and precise, the citrus fruit carried on brisk acidity to a saline, herbal finish. Serve at 10 degrees in a white glass.
