Description
Els Bassots is a natural white from D.O. Conca de Barbera, made by Escoda-Sanahuja from a single hillside vineyard set between Prenafeta and Montblanc at roughly 450 metres. The soils are clay over limestone, which holds water through the dry Catalan summer and lends the wine its saline, mineral spine. The vines are farmed biodynamically, with no synthetic treatments, and the fruit is picked by hand. Vinification is natural, with wild yeasts and low added sulphur. The wine is fermented and aged in a mix of clay amphorae and French oak for around fifteen months, with the amphorae giving gentle oxygen exchange and the lees contact building texture and a subtle savoury depth. Expect a deep straw colour and a nose of quince, dried apricot, chamomile and beeswax. The palate is dry and textured, with orchard fruit, a herbal edge and the chalky grip typical of natural whites from calcareous ground. The finish is long and saline. Serve at 11 to 13 degrees in a broad glass.

Pairs with roast chicken and aged Manchego, where the texture and saline grip stand up to richer flavours. The herbal edge also works with grilled vegetables and mushroom risotto, and the dry finish handles mildly spiced dishes.
