Description
Eloi Cedó left the 4 Kilos family in 2010 to build Sistema Vinari, a set of micro-productions shaped by the Mediterranean winds of Mallorca. Fato blends three native island grapes, Callet, Manto Negro and the rare Escursac, grown in red chalky-clay soils. Clay holds water and moderates vine stress through the dry island summers, while the underlying chalk lends freshness and a savoury quality to the fruit. The wine is aged for twelve months in used French oak barrels. Because the oak is old rather than new, it contributes slow, gentle oxygen exchange that rounds the tannins and adds complexity without overt vanilla or toast, keeping the focus on the grapes and the site. The colour is medium ruby. The nose is savoury and herbal, with ripe red berries, plum, wild thyme and a leathery, earthy note. The palate is medium-bodied with fine tannin, fresh acidity and a dry, mineral finish. Serve at 16 degrees, decanted if young. It suits roast lamb, grilled beef, mushroom dishes and mature hard cheeses.
