Description
El Sosiego is the more serious Chardonnay from Finca Las Caraballas, grown organically on the continental plains of Castilla y León. The wide daily temperature range preserves acidity in a warm climate, giving fruit that ripens fully but keeps freshness. The wine sees six months on its fine lees, where the slow breakdown of yeast cells adds a creamy weight and a light bready character, followed by a long thirty six months resting in bottle. That extended bottle age, unusual for a white at this level, allows the primary fruit to settle and secondary hazelnut and toast notes to develop while the wine holds its line. The colour is deep gold. The nose brings ripe pear and white peach alongside hazelnut, honey and toasted bread. On the palate it is broad and textured, the lees and bottle age lending a nutty complexity over a core of orchard fruit, closing dry with a savoury edge. Serve at 11 to 13 degrees in a large white wine glass.

Serve with roast chicken or baked salmon, where the nutty, bottle aged weight stands up to the richer flesh. It also suits roasted root vegetables and a wedge of hard nutty cheese such as aged Gouda or Comté.
