Description
El Padrino de Mi Tierra is a value blanco from agave azul, the only species tequila allows, sold in a tall bottle reminiscent of bigger names but pitched at a fair price. The agave comes from both valley lowland and highland fields in Jalisco, and being unaged this is the most direct read of the cook and the still.
The agave is cooked in brick hornos and autoclaves, extracted on a roller mill, fermented in steel tanks and twice distilled in the usual tequila manner, then bottled at 40%. The flavour stays in classic blanco territory, cooked agave with lime and citrus, a thread of green banana and ripe fruit sweetness, and black pepper, mint and tobacco running through to a clean finish.
