Description
El Occidental, launched in 2019, draws on the mezcal traditions of western Mexico, and this bottling captures the terroir of Guerrero through its signature agave Cupreata, locally called maguey papalote, Agave cupreata. It is made by Maestro Cristian Casarrubias in Axaxacualco, in a landscape of high mountain and canyon. The spirit is an artesanal joven, double distilled and bottled unaged at 47%.
The agave is roasted for three days in an underground oven of wood and rocks, milled with a mechanical shredder, then fermented in 1,100 litre wooden vats with deep well water and wild yeast. Distillation is a double pass through copper alembics. Cupreata gives cooked agave, green fruit and pepper on the nose, while the palate is astringent and bittersweet with a floral finish and a short, light aftertaste. The texture stays light and smooth, a clear expression of Guerrero agave.
