El Níspero is a varietal Albillo from La Palma in the Canary Islands, grown on volcanic soils. Hand harvested, cold macerated and fermented with indigenous yeasts, it shows white peach, orchard fruit and a mineral, saline lift.

Description
El Níspero comes from the island of La Palma in the Canaries, where vines grow on dark volcanic soils under an Atlantic influence that keeps the whites fresh and saline. The wine is a varietal Albillo, an old Canary white grape, hand harvested into small crates of 12 to 14 kilos to protect the fruit. In the winery the grapes are sorted and gently destemmed, then given a cold maceration for 24 hours, a technique that draws aroma and flavour from the skins while the low temperature prevents oxidation and preserves freshness. Fermentation follows at a controlled 16 degrees using the vineyard's own indigenous yeasts, which lend a distinct sense of place, and the wine then rests around three months before it is filtered and clarified. The volcanic ground gives the wine its mineral, faintly smoky lift. The colour is pale straw. The nose shows white peach, pear and white flowers over a stony, saline note. The palate is dry, light and fresh, with green apple and citrus peel carried by crisp acidity to a clean, mineral finish. Serve well chilled at 9 to 10 degrees.
