Description
Bodegas Luis Pérez works in Jerez de la Frontera under the VT Cádiz designation, making unfortified table wines from the grapes of the Sherry country rather than the fortified classics. El Muelle de Olaso is a young Palomino, the region's dominant white grape, here made as a still, dry wine that reaches its alcohol naturally without fortification. The vineyards sit on albariza, the pale chalk soil that gives Jerez wines their salinity and their ability to hold freshness in a warm climate, reflecting sunlight and retaining moisture through the dry summer. The wine rests six months on its fine lees, which adds texture and a savoury depth as the yeast cells slowly break down. It shows pale yellow with greenish tints, a nose of green apple, lemon, white flowers and a chalky, saline note. The palate is fresh, dry and light bodied, with citrus and orchard fruit over a clear saline mineral line, finishing crisp and clean. This is a bright, coastal expression of Palomino away from the flor cellars. Serve well chilled at 9 to 10 degrees. Ideal with fried fish, shellfish and green salads.
