Description
El Mayor is a value driven highland reposado made by the González family at their Arandas distillery in the southern reaches of Los Altos, Jalisco, from 100% Blue Weber. It is rested at least nine months in white oak, well past the class minimum, which gives it an elegant structure and a notably soft finish.
The mildness traces to the cook: the agave is steamed at low pressure over twenty four to forty eight hours rather than blasted quickly in a high pressure autoclave. After roller mill extraction and a stainless fermentation without fibres, it is twice distilled in a stainless pot with a copper coil. The result enters soft and round, then turns drier, with fragrant fruity agave, vanilla, caramel and a perfumed spice across a medium weight palate and a balanced finish at 40%.
