Description
El Mayor Extra Anejo comes from Destiladora Gonzalez Lux in Arandas, in the southern reaches of the Los Altos highlands of Jalisco. It is made entirely from mature Blue Weber agave and aged a minimum of three and a half years in selected oak, a long rest that pushes it well into oak led territory while the highland fruit underneath holds on.
The agave is cooked by low pressure autoclave and the juice extracted by roller mill, fermented in stainless steel without fibre, then twice distilled in a stainless pot fitted with a copper coil. Maturation runs three and a half years in American white oak, drawing out caramel, chocolate, hazelnut and a touch of nutmeg alongside dried fruit. The palate follows with wood, caramel, chocolate and nut, and a long finish that closes on cooked agave. Bottled at 40%.
