Description
El Lagar de Moha works in D.O. Rueda in Castilla y Leon, the heartland of Verdejo, and farms biodynamically and organically. Varron Cuvée Especial is made only from selected fruit and aged for twelve months in oak barrels, which sets it apart from the fresh, unoaked Verdejo the region is known for. Rueda sits on a high plateau with stony, gravelly soils and a continental climate, where warm days and cold nights preserve acidity and aromatic intensity in the grapes. The long barrel ageing shifts the wine towards a fuller, more textured style: the oak contributes vanilla and a light toast, while extended lees contact rounds the palate and adds a nutty, creamy weight. Verdejo keeps its varietal signature of fennel and citrus underneath. The colour is a bright golden yellow. The nose leads with ripe white peach and pear alongside almond, honey and toasted bread from the wood. The palate is broad and dry, with stone fruit and citrus balanced by a savoury, nutty finish and a persistent acidity. Serve at 11 to 13 degrees in a larger white glass.






Additional information
Pairs with roast chicken and roast pork, where the barrel weight and stone fruit match the richer meat. It also carries baked cod and other fuller white fish, and the nutty finish suits aged Manchego or a mature Gruyère.
