Description
El Lagar de Moha Sapientia Verdejo is a young white from D.O. Rueda, made at the first winery in the appellation certified as organic and farmed biodynamically. Rueda occupies a high plateau in Castilla y León, where gravelly soils, low in organic matter, sit over a limestone and clay subsoil. The poor, free-draining ground keeps yields low, while the strong day-to-night temperature swings of the continental climate preserve acidity as the fruit ripens, which gives Verdejo its bright, fresh character. The grapes are fermented in stainless steel with no oak, a choice made to keep the variety's aromatics and green, herbal signature intact. This is organic and vegan wine made with a low-intervention approach. It pours pale with green tints and opens with pear, green apple and citrus, backed by the fennel and dried-herb tone that marks the grape. The palate is dry and refreshing, with the fruit carried by firm acidity to a saline, stony finish drawn from the limestone soils. Serve well chilled at 8 to 10 degrees in a standard white glass.
