Description
El Lagar de Moha Sapientia Sauvignon Blanc is a young white from D.O. Rueda, made at the first winery in the appellation to be certified organic, and farmed biodynamically. Rueda sits on a high continental plateau in Castilla y León, where the soils are largely gravel and pebbles, poor in organic matter, over a limestone and clay subsoil. Those free-draining, low-vigour soils and the wide diurnal temperature range let the grapes ripen slowly while holding on to acidity, which is the key to the wine's freshness. The fruit is picked early and fermented in stainless steel with no oak, a method chosen to protect the variety's aromatics and keep the profile clean and direct. This is organic and vegan wine, made with minimal intervention. It shows a pale colour with green highlights and a nose of green apple, lemon and elderflower lifted by a grassy, herbal note. The palate is crisp and dry, with the citrus and stone-fruit fruit carried by a firm line of acidity and a saline, mineral close from the limestone soils. Serve well chilled at 8 to 10 degrees.
