Description
Bodegas Frontonio is a small Aragón project built on old vines and low-yield vinification, working overlooked vineyards in the province of Zaragoza. This single-variety Macabeo comes from mature plantings at altitude, where cool nights slow ripening and hold acidity while the fruit gains depth over a long season. The continental interior gives wide diurnal shifts that keep the wine fresh despite the warm region. After a gentle press the wine spends twelve months in foudres, large old wooden vats that let it breathe and settle on its fine lees without adding obvious oak flavour. That slow lees contact releases mannoproteins, which round the texture and add a savoury, doughy dimension, while the neutral wood integrates air rather than vanilla. The colour is bright straw with a golden core. The nose is subtly aromatic, showing white peach, pear and white flowers over almond and fresh bread. The palate is broad but balanced, with citrus acidity keeping the savoury, nutty weight in line through a long finish. Serve at 10 to 12 degrees.

Additional information
A good match for baked white fish, roast chicken and pork loin, where its texture stands up to richer sauces. The savoury, nutty side also suits aged Manchego, and it works with roasted squash and root vegetables.
