El Grifo is the oldest winery in the Canary Islands, working volcanic ground on Lanzarote. This experimental, single-berry Listán Negro is fermented in stainless steel as a natural wine, light and floral with red berry, lavender and a herbal lift of tomato leaf and fennel.

Description
El Grifo farms on Lanzarote in the Canary Islands, one of the oldest and most remote wineries in Spain. The island grows ungrafted Listán Negro in volcanic ash, with each vine set in a hollow ringed by a low stone wall that traps moisture and shelters the plant from the constant Atlantic trade winds. The black volcanic soil drains freely and retains night dew, while the maritime climate keeps temperatures even and acidity high. This bottling comes from the winery's Vintage Experience range, made berry by berry and vinified as a natural wine. Fermentation runs in stainless steel with no oak, which keeps the fruit bright and the volcanic character clear. The colour is pale ruby. The nose is intensely floral, with lavender and elderflower over fresh red berry, a green note of tomato leaf and a hint of fennel. The palate is light and fresh, with low tannin, vivid acidity and a saline, mineral finish that reflects the lava soil. Serve at 13 to 14 degrees, lightly chilled, in a standard red glass. It pairs with lighter meats and grilled fish.
