El Grifo grows this Malvasia Volcanica in Lanzarote’s D.O., from pre-phylloxera vines over sixty years old on volcanic soils. Aged twenty-eight months on lees, it is golden and textured, with stone fruit, honey and a saline, mineral core.

Description
El Grifo farms in Tinajo on Lanzarote, in the Canary Islands, where black volcanic soils, ash and lava hold heat and moisture in an arid, wind-swept climate. Lanzarote escaped phylloxera, so these Malvasia Volcanica vines are ungrafted and more than sixty years old, planted in hollows dug into the ash and sheltered by low stone walls. The old vines and volcanic ground give low yields and a wine of concentration and salinity. This bottling marks the winery's 250th anniversary. After fermentation it spends twenty-eight months on its lees, then a further forty-eight months in bottle, the long lees contact building a creamy weight and a savoury depth while the ash lends a smoky mineral edge. The colour is bright gold. The nose is generous, leading on ripe stone fruit and citrus peel, with honey, beeswax and white flowers. The palate is broad and textured, the stone fruit set against a firm saline minerality that keeps it fresh and drives a long finish. Serve at 11 to 13 degrees in a white wine glass.

Pour this with grilled prawns, seared tuna or a rich white fish stew, where the salinity and lees weight come into their own. The stone fruit and honey also carry roast chicken and baked squash.
