El Aviador is an easy drinking Tempranillo from Pagos del Rey, a producer present across several of Spain's leading appellations and here working under the VT Castilla y León regional designation. It comes in a five litre bag in box, a format that keeps the wine fresh for weeks after opening because the collapsing inner bag prevents air contact, making it well suited to everyday drinking and larger gatherings. The fruit is monitored closely for ripeness before harvest to capture clean, ripe Tempranillo character. This is an unoaked, fruit led style, so there is no barrel influence to mask the grape, leaving the focus on bright primary fruit and a soft, approachable structure. The continental climate of the central Spanish plateau, with warm days and cool nights, gives ripe fruit while keeping enough acidity for freshness. The colour is a lively cherry red. The nose shows red berries, cherry and plum with a twist of black liquorice. The palate is medium bodied, juicy and appetising, with soft tannins and a clean fruit finish. Serve lightly cool, around 15 degrees, in a standard glass. It is an all purpose red for casual meals.
