Eigashima Shuzo, the producer behind the White Oak single malt range, operates at Akashi in Hyogo prefecture under Japan's oldest whisky licence dating to 1919. This 5 Years Old is a single cask, cask strength release matured in a white wine cask and bottled for the French market at 50%.
White wine maturation steers the spirit away from the sherry-led sweetness common elsewhere in the White Oak programme, contributing pale pear, fresh apple and a gentle floral note alongside a crisper, more mineral finish. Eigashima's light and clean new make character suits this cask style well, allowing the wine influence to show clearly without competing with a heavy distillate. The result is among the more delicate expressions in the range.
