Grown on the volcanic eastern slopes of Mount Etna, this biodynamic Carricante from Eduardo Torres Acosta spends eight months in old foudres. It is dry and mineral, with lemon, green apple and white peach over a saline, faintly smoky finish driven by the lava soils.

Description
Eduardo Torres Acosta makes this Carricante on the eastern slopes of Mount Etna in Sicily, farmed biodynamically and made as a natural wine. Etna is an active volcano, and its dark soils are a mix of volcanic ash, lava sand and mineral-rich basalt that drain freely and force the vines to root deep. That volcanic ground, combined with the altitude and the wide swing between day and night temperatures on the mountain, gives the wine its freshness and firm acidity. Carricante is Etna's leading white grape, known for citrus drive and a mineral, sometimes smoky character. The wine spends eight months in foudres, large old wooden vats that allow slow oxygen exchange and lees contact while adding no oak flavour, so the fruit stays clean and the texture gains a little breadth. The colour is a bright straw yellow. The nose shows lemon, green apple and white peach with a stony, faintly smoky edge. The palate is dry and linear, saline and tightly acidic, with a long mineral finish. Serve at 9 to 11 degrees.
