Description
This official Edradour, a 21 year old, from 2000, cask 3154 & 3155, at 55.8%, 1059 bottles in all. Edradour is a full bodied, oily Highland malt made on Ben Vrackie water at Pitlochry. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
The spirit was distilled slowly in the old farm stillhouse on Ben Vrackie water, for a rich, nutty spirit with a waxy depth. It was matured in an Oloroso cask, the wood working slowly into the rich malt. Through oxidative maturity esters concentrate, the dried fruit and chocolate turning rich over the waxy body. Ben Vrackie water and a long ferment give the rich Edradour make. The worm tubs leave an oily weight that carries through the years in cask. A 2018 expansion added a second still house, the production still small and traditional. Its water comes from the Ben Vrackie springs in the hills above the distillery.
Bottled at a cask strength 55.8%, it is rich. Chocolate, dried fruit and a waxy oil, with dried fruit, fig and walnut from the cask. The mouthfeel is thick and oily, the fruit on a creamy body. The finish is long, oily and gently spiced. This is the oily, rich malt of tiny Edradour.
