Description
Edradour from the distillery, a 19 year old, from 1999, cask 814 + 815, at 56.2%, 589 bottles in all. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage.
The spirit was distilled from unpeated malt in tiny copper stills and worm tubs, for a rich, nutty spirit with a waxy depth. A Bordeaux cask held it, shaping the oily spirit over the years. Through oxidative maturity esters concentrate, the dried fruit and chocolate turning rich over the waxy body. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. A small distillery and a hands on approach shape every cask by hand. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire. Maturation in the dunnage warehouses at Pitlochry is slow and steady.
At its natural 56.2% it is rich and full bodied. Chocolate, dried fruit and a waxy oil, with a dark berry and a dry tannin from the cask. A baked apple and a gentle spice lift it. It finishes long, rich and oily. This is a rich Highland malt from the pocket glen at Pitlochry.
