Description
An official release of Edradour, a 21 year old, from 1999, cask 826 + 827, at 55.6%, 582 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire.
Distilled from unpeated malt in tiny copper stills and worm tubs, for a full, oily make of dried fruit and chocolate. A Barolo cask held it, shaping the oily spirit over the years. Through oxidative maturity esters concentrate, the dried fruit and chocolate turning rich over the waxy body. Signatory's wide cask range gives the small distillery an unusual variety of finishes. Long ageing turns the rich make towards dried fruit, fig and a soft spice. A gentle maturation suits the oily make, the nutty richness growing with time. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.
At cask strength 55.6% it is big and oily. A rich, nutty sweetness, with a dry, cherry and tannic edge from the cask. Fig, nut and a creamy malt fill the middle. It finishes long, rich and oily. This is a rich, oily Highland single malt.
