Edradour Straight from the Cask 10 Years Old 2011

Edradour from the distillery, a 10 year old, from 2011, cask 438, at 59.1%, 929 bottles in all. Edradour is a Highland single malt from a 19th century farm distillery run by a handful of hands. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.

It was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, the worm tubs lending a weighty, oily character. An Oloroso cask held it, shaping the oily spirit over the years. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, the nutty chocolate deepening. Long ageing turns the rich make towards dried fruit, fig and a soft spice. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire. Signatory's wide cask range gives the small distillery an unusual variety of finishes.

At a natural 59.1% it is full and oily. Dried fruit, chocolate and a nutty oil, with dried fruit, fig and walnut from the cask. Soft chocolate and a nutty oil sit behind the cask. The finish is rounded, fruity and gently spiced. This is the oily, rich malt of tiny Edradour.
