    An official Edradour, a 14 year old, 2007, at 46%. Dried fruit, chocolate and a nutty oil run through it, with a light red berry and a dry edge from the cask. Water comes from the Ben Vrackie springs above the distillery. Run by just a handful of hands in a pocket glen at Pitlochry. This is Edradour, one of Scotland’s smallest distilleries.

    A 14 year old Edradour, a distillery bottling, from 2007, cask 601, at 46%, 368 bottles in all. Edradour is a small batch Highland malt, owned by the independent bottler Signatory Vintage. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage.

    Made in the smallest of stills and condensed in worm tubs, giving the full bodied, creamy Highland spirit. A Pinot Noir cask held it, shaping the oily spirit over the years. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, the nutty chocolate deepening. Ben Vrackie water and a long ferment give the rich Edradour make. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. Years in oak round the spirit, the dried fruit and chocolate deepening over the oily core.

    At 46% it is smooth and rich. Dried fruit, nut and a soft chocolate, with a light red berry and a dry edge from the cask. The texture is oily and creamy, the fruit lifted by vanilla. It finishes long, rich and oily. This is a rich, oily Highland single malt.
