Edradour from the distillery, a 10 year old, from 2008, cask 336, at 60.8%, 397 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. A 2018 expansion added a second still house, the production still small and traditional.
The spirit was made in the smallest of stills and condensed in worm tubs, building the creamy Edradour style. Maturation came in a Sauternes cask, layered over the rich Edradour make. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. A gentle maturation suits the oily make, the nutty richness growing with time. Signatory's wide cask range gives the small distillery an unusual variety of finishes. Active wood frames the rich fruit without overwhelming the oily Highland spirit. The tiny stills and worm tubs give an oily spirit that takes the cask well.
At its natural 60.8% it is rich and full bodied. Baked apple, marzipan and a creamy malt, with honeyed apricot and a candied citrus from the cask. It is rich and oily, the full bodied spirit shining through. A rich finish ends on dried fruit and a soft oak. This is a rich, oily Highland single malt.
