Edradour SFTC – Madeira Cask Matured 12 Years Old 2010

A 12 year old Edradour, a distillery bottling, from 2010, cask 84, at 58.4%, 440 bottles in all. Edradour is a full bodied, oily Highland malt made on Ben Vrackie water at Pitlochry. Its water comes from the Ben Vrackie springs in the hills above the distillery.

The spirit was run through the small stills with their boil ball purifiers, building the creamy Edradour style. Finished in a Madeira cask, the wood building over the oily, full bodied spirit. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. A small distillery and a hands on approach shape every cask by hand. Active wood frames the rich fruit without overwhelming the oily Highland spirit. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings. The worm tubs leave an oily weight that carries through the years in cask.

At a hearty 58.4% it carries real weight. Dried fruit, nut and a soft chocolate, with a nutty, raisined sweetness from the cask. Soft chocolate and a nutty oil sit behind the cask. Dried fruit, chocolate and a soft oak see out a long finish. This is the little gem of the Highlands at Pitlochry.
