Description
This official Edradour, an 11 year old, from 2006, cask 128, at 59.4%, 961 bottles in all. Edradour is a rich Highland malt from the pocket glen at Balnauld, distilled since 1825. For years its sign read Scotland's smallest distillery; it now calls itself Scotland's little gem.
It was made in the smallest of stills and condensed in worm tubs, the worm tubs lending a weighty, oily character. Finished in a Madeira cask, the wood building over the oily, full bodied spirit. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. Long ageing turns the rich make towards dried fruit, fig and a soft spice. A small distillery and a hands on approach shape every cask by hand. Signatory's wide cask range gives the small distillery an unusual variety of finishes.
At a natural 59.4% it is full and oily. Dried fruit, nut and a soft chocolate, with a nutty, raisined sweetness from the cask. The texture is oily and creamy, the fruit lifted by vanilla. The finish is rounded, fruity and gently spiced. This is a rich Highland malt from the pocket glen at Pitlochry.
