This official Edradour, a 13 year old, from 2008, cask 348, at 60.7%, 389 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
It was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, for the rich, oily make Edradour is known for. It rested in ex-Bourbon oak, oak lactones lending vanilla and a little coconut. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry. A small distillery and a hands on approach shape every cask by hand. Signatory's wide cask range gives the small distillery an unusual variety of finishes.
At cask strength 60.7% it is big and oily. A rich, nutty sweetness, with a soft vanilla from the oak. It is rich and oily, the full bodied spirit shining through. The close is oily and warming, fruit over a gentle oak. This is a creamy, nutty Highland single malt.
