Description
An official release of Edradour, a 13 year old, from 2007, cask 394, at 59.1%. Edradour is a small batch Highland malt, owned by the independent bottler Signatory Vintage. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
The spirit was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, the worm tubs lending a weighty, oily character. It rested in ex-Bourbon oak, oak lactones lending vanilla and a little coconut. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. A small distillery and a hands on approach shape every cask by hand. Signatory's wide cask range gives the small distillery an unusual variety of finishes. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry. The full bodied spirit shows the cask clearly, the sherry and oak to the fore.
At cask strength 59.1% it is big and oily. A full, fruity sweetness, with a soft vanilla from the oak. It is rich and oily, the full bodied spirit shining through. The finish is rounded, fruity and gently spiced. This is a creamy, nutty Highland single malt.
