Description

A 12 year old Edradour, a distillery bottling, from 2012, cask 4, at 46%, 381 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.

Made in the smallest of stills and condensed in worm tubs, for a full, oily make of dried fruit and chocolate. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. Refill oak lets the rich, oily Edradour character lead the way. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage. Maturation in the dunnage warehouses at Pitlochry is slow and steady. A gentle maturation suits the oily make, the nutty richness growing with time.

Bottled at 46%, it is rounded. A rich, nutty sweetness, with a soft vanilla from the oak. Fig, nut and a creamy malt fill the middle. A long, nutty finish carries dried fruit and a soft spice. This is the little gem of the Highlands at Pitlochry.
