Description
Edradour from the distillery, a 12 year old, from 2011, cask 144,168,169,173-176, at 57.8%, 4663 bottles in all. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire.
Run through the small stills with their boil ball purifiers, for the rich, oily make Edradour is known for. An Oloroso cask held it, shaping the oily spirit over the years. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. A small distillery and a hands on approach shape every cask by hand. Active wood frames the rich fruit without overwhelming the oily Highland spirit. Ben Vrackie water and a long ferment give the rich Edradour make. The tiny stills and worm tubs give an oily spirit that takes the cask well.
At its natural 57.8% it is rich and full bodied. Dried fruit, fig and a creamy vanilla, with dried fruit, fig and walnut from the cask. It is rich and oily, the full bodied spirit shining through. The finish is long, oily and gently spiced. This is a Highland single malt of real character.
