An official Edradour, a 13 year old, 2007, at 57.5%. Soft chocolate and a rich, nutty oil. It uses an open mash tun, Oregon pine washbacks and worm tub condensers. Founded in 1825, it keeps the old ways in its farm buildings. Water comes from the Ben Vrackie springs above the distillery. This is the little gem of the Highlands at Pitlochry.

Description

This official Edradour, a 13 year old, from 2007, at 57.5%, 1854 bottles in all. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.

The spirit was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, the worm tubs lending a weighty, oily character. It rested in ex-Bourbon oak, oak lactones lending vanilla and a little coconut. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. The tiny stills and worm tubs give an oily spirit that takes the cask well. Active wood frames the rich fruit without overwhelming the oily Highland spirit. Signatory's wide cask range gives the small distillery an unusual variety of finishes. Long ageing turns the rich make towards dried fruit, fig and a soft spice.

Bottled at a cask strength 57.5%, it is rich. Dried fruit, chocolate and a nutty oil, with a soft vanilla from the oak. It is rich and oily, the full bodied spirit shining through. A long, nutty finish carries dried fruit and a soft spice. This is a Highland single malt of real character.
