A 12 year old Edradour from the distillery, at 60.7%. A rich, oily Highland fruit of dried fruit and almond. Its tiny stills and worm tubs give a rich, oily, full bodied spirit. It uses an open mash tun, Oregon pine washbacks and worm tub condensers. Signatory’s wide cask range gives it an unusual variety of finishes. This is the oily, rich malt of tiny Edradour.

Description

A 12 year old Edradour, a distillery bottling, from 2013, at 60.7%, 1628 bottles in all. Edradour is a Highland single malt distilled in a pocket glen near Pitlochry since 1825. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage.

Run through the small stills with their boil ball purifiers, the worm tubs lending a weighty, oily character. A refill bourbon hogshead held it, keeping the rich, oily character to the fore. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. The worm tubs leave an oily weight that carries through the years in cask. It is one of the smallest traditional distilleries in Scotland, long run by just two or three hands. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.

At cask strength 60.7% it is big and oily. A rich, nutty sweetness, with a soft vanilla from the oak. It is rich and oily, the full bodied spirit shining through. The finish is long, oily and gently spiced. This is a rich Highland malt from the pocket glen at Pitlochry.
