Description
An official release of Edradour, a 12 year old, from 1993, cask 245, at 59.7%, 655 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry.
The spirit was distilled slowly in the old farm stillhouse on Ben Vrackie water, for a full, oily make of dried fruit and chocolate. A refill bourbon hogshead held it, keeping the rich, oily character to the fore. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. Signatory's wide cask range gives the small distillery an unusual variety of finishes. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit. A gentle maturation suits the oily make, the nutty richness growing with time. The worm tubs leave an oily weight that carries through the years in cask.
At a hearty 59.7% it carries real weight. Dried fruit, fig and a creamy vanilla, with a soft vanilla from the oak. Soft chocolate and a nutty oil sit behind the cask. The finish is long, oily and gently spiced. This is a Highland single malt of real character.
