An official Edradour, a 10 year old, 2008, at 46%. Fig, dried fruit and a soft chocolate fill the glass, with dried fruit, fig and walnut from the cask. Founded in 1825, it keeps the old ways in its farm buildings. Its tiny stills and worm tubs give a rich, oily, full bodied spirit. This is a creamy, nutty Highland single malt.

Description

Edradour from the distillery, a 10 year old, from 2008, cask 113, at 46%, 878 bottles in all. Edradour is a Highland single malt from Perthshire, traditional and tiny, now Scotland's little gem. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.

The spirit was drawn off the tiny stills and cooled in worm tubs for an oily make, building the creamy Edradour style. It was matured in an Oloroso cask, the wood working slowly into the rich malt. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. Maturation in the dunnage warehouses at Pitlochry is slow and steady. Signatory's wide cask range gives the small distillery an unusual variety of finishes. It is one of the smallest traditional distilleries in Scotland, long run by just two or three hands. Ben Vrackie water and a long ferment give the rich Edradour make.

Reduced to 46%, it is mellow. A rich, nutty sweetness, with dried fruit, fig and walnut from the cask. Fig, nut and a creamy malt fill the middle. The close is oily and warming, fruit over a gentle oak. This is the oily, rich malt of tiny Edradour.
