This official Edradour, a 10 year old, from 2011, cask 397, at 60%, 275 bottles in all. Edradour is a creamy, sherried Highland single malt from one of the smallest distilleries in Scotland. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
It was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, for the rich, oily make Edradour is known for. Ex-Bourbon casks held it, the gentle American oak letting the oily make lead. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. Refill oak lets the rich, oily Edradour character lead the way. Long ageing turns the rich make towards dried fruit, fig and a soft spice. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit.
At a natural 60% it is full and oily. Chocolate, dried fruit and a waxy oil, with a soft vanilla from the oak. Beneath it run dried fruit, chocolate and a soft oil. The finish runs long, nutty and warming. This is Edradour, one of Scotland's smallest distilleries.
