Edradour from the distillery, a 17 year old, from 1999, cask 820, 821 & 825, at 55.2%, 911 bottles in all. Edradour is a creamy, sherried Highland single malt from one of the smallest distilleries in Scotland. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.
It was run through the small stills with their boil ball purifiers, building the creamy Edradour style. It was matured in a Bordeaux cask, the wood working slowly into the rich malt. At oxidative maturity aldehydes lend a nutty edge while ellagitannins add a gentle, drying grip over the oily malt. The tiny stills and worm tubs give an oily spirit that takes the cask well. Long ageing turns the rich make towards dried fruit, fig and a soft spice. Signatory's wide cask range gives the small distillery an unusual variety of finishes. The full bodied spirit shows the cask clearly, the sherry and oak to the fore.
At cask strength 55.2% it is big and oily. Dried fruit, chocolate and a nutty oil, with a dark berry and a dry tannin from the cask. Fig, nut and a creamy malt fill the middle. Dried fruit, chocolate and a soft oak see out a long finish. This is a rich, oily Highland single malt.
