    An official release of Edradour, a 16 year old, from 2000, cask 807, 810 & 811, at 56.7%, 894 bottles in all. Edradour is a creamy, sherried Highland single malt from one of the smallest distilleries in Scotland. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.

    It was run through the small stills with their boil ball purifiers, for the rich, oily make Edradour is known for. Finished in a Barolo cask, the wood building over the oily, full bodied spirit. Through oxidative maturity esters concentrate, the dried fruit and chocolate turning rich over the waxy body. A gentle maturation suits the oily make, the nutty richness growing with time. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.

    At a hearty 56.7% it carries real weight. A rich, oily orchard fruit and almond, with a dry, cherry and tannic edge from the cask. The texture is oily and creamy, the fruit lifted by vanilla. The finish runs long, nutty and warming. This is Edradour's full bodied, sherried Highland style.
