Description
Ballechin from the distillery, an 18 year old, from 2004, cask Batch 001, at 50.9%. Ballechin is Edradour's heavily peated malt, smoke laid over a rich, oily Highland spirit. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
It was distilled slowly from peated malt in the old farm stillhouse, building the rich, peated Ballechin style. A refill bourbon hogshead held it, keeping the rich, oily character to the fore. Into oxidative maturity, slow air ingress builds fruity esters and a tarry depth, the smoke turning to soft ash and dried fruit. Long ageing turns the rich make towards dried fruit, fig and a soft spice. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. A gentle maturation suits the oily make, the nutty richness growing with time. A small distillery and a hands on approach shape every cask by hand.
At 50.9%, undiluted, it is deep and concentrated. A smoky, oily sweetness, with a soft vanilla from the oak. Beneath the smoke run dried fruit, chocolate and a soft oil. A long, smoky finish carries dried fruit and a soft ash. This is Ballechin, Edradour's peated single malt.
