    A 9 year old Edradour from the Pitlochry bottler Signatory Vintage, 2016, at 60.1%. Full and nutty, all baked apple, marzipan and a soft oil, with dried fruit, fig and walnut from the cask. Founded in 1825, it keeps the old ways in its farm buildings. A small batch Highland malt, sherried and creamy in style. This is the oily, rich malt of tiny Edradour.

    From the Pitlochry bottler Signatory Vintage, a 9 year old Edradour, distilled in 2016, from cask 448, bottled at 60.1%, one of 681 bottles. Edradour is a Highland single malt from a 19th century farm distillery run by a handful of hands. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.

    Run through the small stills with their boil ball purifiers, giving the full bodied, creamy Highland spirit. An Oloroso cask held it, shaping the oily spirit over the years. Young and extractive, the cask sheds vanillin (vanilla) and toasted sugars (light caramel) over the creamy make. Ben Vrackie water and a long ferment give the rich Edradour make. Active wood frames the rich fruit without overwhelming the oily Highland spirit. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit.

    Bottled at a cask strength 60.1%, it is rich. A rich, nutty sweetness, with dried fruit, fig and walnut from the cask. It is rich and oily, the full bodied spirit shining through. Dried fruit, chocolate and a soft oak see out a long finish. This is the oily, rich malt of tiny Edradour.
