From the Pitlochry bottler Signatory Vintage, a 9 year old Edradour, distilled in 2014, from cask 376, bottled at 60.3%, one of 658 bottles. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. Its water comes from the Ben Vrackie springs in the hills above the distillery.
The spirit was run through the small stills with their boil ball purifiers, giving the full bodied, creamy Highland spirit. An Oloroso cask held it, shaping the oily spirit over the years. Young and extractive, the cask sheds vanillin (vanilla) and toasted sugars (light caramel) over the creamy make. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry. Signatory's wide cask range gives the small distillery an unusual variety of finishes.
At a natural 60.3% it is full and oily. Dried fruit, fig and a creamy vanilla, with dried fruit, fig and walnut from the cask. The mouthfeel is thick and oily, the fruit on a creamy body. It finishes long, rich and oily. This is the little gem of the Highlands at Pitlochry.
